Snow Day Outfit

Hi loves!

I hope everyone had a great weekend and Happy Monday :).  If you were on the east coast I know you were most likely snowed in!  I loved having a snowy weekend.  Tom and I just stayed in and watched movies and cuddled, my favorite thing to do on the weekends when its nasty outside LOL.  We also got a chance to make a bunch of healthy meals and juice a lot.  It was crazy on Saturday and then Sunday came around and the snow stopped and it was so sunny and nice out, so we decided to do a little photo shoot.  I love nothing more then wearing my giant warm Sorel boots, big comfy sweaters and scarves.  Tom got me this scarf in the pictures for Christmas, its made of recycled cashmere from a woman who hand makes them all to order at a cute little shop in Peekskill.  These mirrored sunglasses are so great, you must check out ZeroUv.com, they have awesome prices and really cute options.  I also thought it would be fun to show off one of my favorite hairstyles.  I just love braids (especially fishtails!) and they are such an easy way to add a little something extra to any outfit! I hope you all have a great week and enjoy your Monday!

Bun curls!

Hi dolls! Happy hump day! I love that we are half way through the week, feels like it should be Friday, but hey I’ll take it!

So I am always looking for new hairstyles that are quick and easy ones.  I have been using this one super easy method for quick (no heat) curls and thought I would share.  My hair is long enough to do this but I would think even with your hair a bit shorter it would be doable if you used bobby pins to keep the buns in place.  I LOVE easy hair styles because I never seem to have time in the morning to do anything to labor intensive LOL.

I took some pics of one of my favorite, ever so easy, hair styles.  The bun curl. I wash my hair at night, blow dry it, then put it up on a twisted bun on top of my head (right after I finish drying it) and go to bed.  You can leave your hair slightly damp but if you leave it wet it will not dry fast enough overnight so you would probably have to put a blow dryer to it in the morning for a bit.  You simply just put your hair up like you would if you were putting it into a high ponytail, and then just twist the hair and then turn that twist into a bun.  When I wake up I take the bun down, pull apart the curls a bit, tease my hair a little and add some hair spray.  Just like that I achieve these curls:

I love how its a messy/beachy look so you don’t need to fuss with it too much.  I did the one in my pictures with just one large bun but I have also in the past done a few different smaller twisted buns around my head to achieve a tighter, curlier look which was super cute as well.

Vegan Cauliflower and Pasta

I thought I would share one of my all time fave go-to recipes! I made it last night, its so easy to make and really delicious.  My carnivore eating hubby even loves it LOL.

Here are the few ingredients you will need:

  • Head of Cauliflower
  • Garlic
  • Olive Oil
  • Pasta (usually some sort of spaghetti/linguine etc. works best)
  • salt and pepper

So I normally steam the cauliflower first. Then in another pan I start to saute some garlic. You can honestly use as much garlic as you would like.  I love garlic so I did about 3-4 cloves, use more or less and it will still taste wonderful.  Also get a pot of water boiling for the pasta.  Once the cauliflower is soft enough (I poke it with a fork to make sure) I then add it to the pan with the olive oil and sauteed garlic.

I mash up the cauliflower in the pan, leaving chunks still, but you want to break it down to more bite sized pieces.

At this point you want to have a pot of water boiling for your pasta.  Cook the pasta

I sometimes add the cauliflower and pasta all together (I normally use spaghetti, fettuccine, something along those lines) but this time I used rigatoni.  My sister made the rigatoni from scratch so I had to try it!!

Once you saute the garlic and cauliflower add black pepper and salt to taste.  Then add the cauliflower to the drained pasta (or you can keep them separate and just add some olive oil to the pasta to keep it from sticking together)

That is it! Its great because I like to make a big pan of it to last us a couple times during the week.

Starting the New Year Out Right!

How was everyone’s Christmas and New Years?!  NYE was a ton of fun for us.  Tom and I got to spend it upstate with a bunch of our friends.  Nothing better then bringing in the New Year with your loves!

I always get super excited about a New Year.  Something about it feeling like a fresh start seems to get me in such a good mood.  I know each year presents its own challenges but I love being able to start out with a clear head and new goals for the year ahead. 2015 was a tough one for us.  My father-in-law, Fred, passed away just a few weeks shy of our 1 year wedding anniversary.  It was a very emotional time, full with lots of changes as well.  My mother-in-law, Birgit, passed away 4 years ago so Fred’s passing was sort of the end of a lot of different things, or the positive flip on that is the beginning of so many new things.  We had to say goodbye to his parents house, in the town that all of his friends family still live.  It was a very eye opening experience.  Although 2015 was a sad year for us, we cannot say that the entire year was awful.  We got to take our honeymoon in the Dominican Republic, which was so amazing! We also got to see the Met’s go to the world series and even got to see a game at Citi Field! We also got to spend a lot of time with family and loved ones, something that you can never put a price tag on! I like to think that each year has ups and downs, some worse than others, but its what molds us and makes us who we are.

I know we have some changes ahead, not sure what they are yet since we are still working things out, but I know whatever path we end up going down it will be super exciting!

Did any of you make a New Years resolution??!  I did, aside from the usual, getting my butt back into shape and living a healthier life, Tom and I plan to make the most of this year.  We want to start crossing things off our big bucket list, travel around the area we live more and once the weather gets nice try to do as many fun outdoor activities as we can!

Happy New Year!

I have been slacking on my posts lately. Things have just gotten so busy for me lately! I hope everyone had a wonderful holiday and that Santa was good to you all 😉. I would love to hear what your favorite gift was this year. I have to share mine with you guys!

My main gift that I wanted SO bad, sounds kinda silly, but it was a sunrise stimulating alarm clock LOL it is so amazing!

I wake up at 5:30am 5 days a week (ya it’s brutal!) for work and as you all know the winter days are so short and dark! I have always struggled with getting up and energized for my day so early so I thought this alarm clock could possibly be my saving grace, and it is! It starts to slowly light up about 20 minutes before the actual alarm goes off so when you open your eyes it feels like it’s day time (I can’t believe how happy I am when I wake up) never thought it would be possible haha. My hubby even said he sees a huge difference in my mood in the mornings! This clock also has the choice of natural sounds for your alarm (which is what I use) or the FM radio. It’s been too long!

Oh the joys of the holidays! I am always so crazy busy right before the holidays that I haven’t had a chance to post on my blog.  How have you guys been? I am such a slacker and STILL need to buy Christmas gifts! (Ahh) it’s going to be so insane shopping this weekend but it needs to happen. 

As some of you know from my past posts I have made the switch to being a vegan and also just being more conscious of what I put into and on my body.
